There’s something timeless about roasted potatoes. They’re warm, comforting, and satisfying — but when done right, they can become so much more than just a side dish. At HEX RESTAURANT, we believe that even the most humble ingredients deserve a seat at the fine dining table. That’s why today, we’re sharing our signature take on a rustic classic: Roasted Garlic & Herb Butter Potatoes.

Ingredients (Serves 4)

  • 1 kg baby potatoes (red or yellow), halved
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 cloves of garlic, minced
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • Zest of 1 lemon
  • Optional: freshly grated Parmesan for finishing

Instructions

  1. Preheat & Prep
    Preheat your oven to 200°C (390°F). Line a large baking tray with parchment paper.
  2. Parboil for Perfection
    Bring a pot of salted water to a boil. Add the halved potatoes and cook for 7–8 minutes, until slightly tender but not fully cooked. Drain and let them steam-dry for 2–3 minutes.
  3. Butter & Herb Magic
    In a small saucepan, melt the butter with olive oil over low heat. Stir in garlic, rosemary, thyme, lemon zest, salt, and pepper. Let it infuse for 2 minutes (do not brown the garlic).
  4. Toss & Roast
    Place the parboiled potatoes on the baking tray. Drizzle the warm butter mixture over them and toss gently to coat. Spread them out evenly, cut side down.
  5. Bake to Gold
    Roast for 25–30 minutes, flipping halfway through, until crisp, golden and fragrant.
  6. Finish Strong
    Once out of the oven, you can sprinkle them with a touch of freshly grated Parmesan or a pinch of flaky sea salt. Serve immediately while hot and irresistibly aromatic.

Serving Tip – Make It a Star

Though traditionally a side, this dish can shine as a main when paired with a light arugula salad and a chilled glass of white wine. Perfect for cozy dinners or elegant brunches alike.
